Sole is expected to fully open before the end of the month at Conrad Abu Dhabi Etihad Towers.

Sole restaurant offers a contemporary and vibrant take on Italian cuisine utilising the very best ingredients available. With titles offering a play on words such as ‘We’ve Twisted a Classic’ which is double dough ravioli stuffed with homemade ricotta, spinach and mazzara prawn; and ‘What a Catch’ which is a dish comprising of poached sea bass with roasted garlic, fresh tomato broth and charred lemon, this restaurant is sure to serve up classic Italian food with a contemporary twist.

The restaurant will head up by Italian chef, Simone De Vivo, who commented: “It has been a great personal achieve to have joined this incredible team and become a part of the Conrad Hotels & Resorts family. I am extremely excited to head up Sole, and share my love for innovative, fun and flavoursome food. I began my culinary journey in my hometown of Naples, Italy and I cannot wait to share everything I have learnt and mastered along the way.”
